These pumpkin cookies are the perfect way to kick off the Fall baking season! These are inspired by a cookie my hometown supermarket sold years ago. I wanted to recreate a vegan version, and after a few tries, I got it down.
These cookies are thick, cakey, soft, and full of great fall flavor. Make them for your next Fall gathering, or any time you want to feel those cozy fall feelings. I’ve finished these off with an optional, but delicious, drizzle of semi sweet chocolate, and a sprinkling of large flake sea salt.

Recipe:
Makes about 2 dozen cookies
Ingredients
- 1 c vegan butter, softened
- 1 c brown sugar
- 1/4 c aquafaba
- 2 tbs flax seed
- 1 c canned pumpkin
- 2 tbs corn starch
- 2.5 c flour
- 1.5 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 c chocolate chips
- 1 cup walnuts, roughly chopped
- 1/2 c chocolate chips for decorating
- large flake sea salt
Instructions
Preheat oven to 375 degrees
To a small bowl add your flax seed and aquafaba, set aside
Add your softened vegan butter and brown sugar to a large bowl or stand mixer. Beat until light and fluffy, and the color has lightened significantly. Add in your flax/aquafaba mixture and mix until well combined. Add in your canned pumpkin and mix again. The dough may look a bit split, this is okay.
Combine all your dry ingredients in a medium bowl, and then slowly add it to your wet ingredients, mixing on low speed until just combined.
Fold in 1 cup chocolate chips and chopped walnuts.
Scoop 2 tablespoon sized balls into a lightly greased baking sheet.
Bake until lightly browned around the edges, and the surface no longer looks wet and shiny, about 8-10 minutes, let cool on your baking sheet about 10 minutes and then transfer to a cooling rack
Melt 1/2 cup chocolate chips in a double boiler, or in your microwave. Let cool slightly, put in either a small plastic bag or frosting bag. Cut a small tip off the bag, and drizzle the chocolate over your finished cookies. Finish off with a sprinkle of large flake sea salt, and enjoy!
